What happens when a dirtbag kayaker decides to "adult" and accidentally creates the best Mediterranean food in Colorado? The Olive started as a small, grass-roots dream that somehow survived eight years of a paddler trying to run a business (yes, we know it's an oxymoron). We're stubbornly committed to fresh ingredients and a full-circle composting program because we figure if we're going to feed people, we shouldn't trash the planet doing it. Our food is so ridiculously good that even if we served it from a dirty alley, it still would be the best sandwich you ever had.
